Apple & Banana ‘Porridge’

I always like to start my day with something which is hydrating and easy on my digestion like fresh fruit or a smoothie. This ‘porridge’ makes a filling breakfast or snack and is perfect for people with active gut inflammation. Apples and bananas both contain a special type of soluble fibre called pectin which our beneficial gut bacteria love. Both are mandatory foods on the Crohn’s Disease Exclusion Diet.

Ingredients

·         2 ripe bananas (spotty), chopped

·         2 apples, skin on, chopped (I like Pink Lady). Remove skin if you have gut inflammation.

·         2 Medjool dates (optional)

·         1/2 tsp ground cinnamon

·         2 tbs sultanas

·         1 tsp honey or maple syrup

·         Handful of fresh berries to serve

Instructions

Add bananas, apples, dates and ground cinnamon to a food processor and pulse until it forms a porridge-like consistency. Spoon into a serving bowl and top with sultanas, honey/maple syrup and fresh berries.

Notes

If you have active IBD symptoms, make sure you peel the apples to remove the skin which can be aggravating to an inflamed gut.
