Green Hummus

Hands up if you feel like you eat the same old foods every week? Yep, me too!

Our gut microbes thrive on a diversity of different plant foods, so I try to vary my staple meals and snacks wherever possible. This is how my Green Hummus was born, using basic pantry staples combined with some fresh produce from the garden or fridge. Super simple, great for your gut bugs and it tastes so good!

For a fun festive twist, shape hummus into a circle and top with finely diced vegetables and herbs of choice.

Ingredients

Scale

1 can organic chickpeas, drained and rinsed

1 clove garlic

2 tbsp un-hulled tahini

50g or 2 handfuls of baby spinach

1 small handful parsley

1 small handful fresh basil

1 small handful fresh chives, chopped

Juice of 1/2 large lemon

1 tbsp olive oil (optional)

1/4 tsp iodised salt

23 ice cubes (to make a smoother consistency)

Instructions

Add all ingredients to a food processor and blend until you reach the desired consistency. Serve and enjoy with freshly chopped raw vegetables and/or your favourite crackers.

Notes

This is also tasty served with falafel or with pasta.
