Ingredients

4 large handfuls of baby spinach

1 garlic clove

1/41/2 cup soy milk

1 tin of butter beans or cannellini beans, drained and rinsed

1 head of broccoli, chopped into florets

Cooked pasta to serve

Nutritional yeast to serve (optional)

Instructions

Add the baby spinach, garlic and soy milk to a small saucepan and place on medium heat until the spinach has wilted and the soy milk is bubbling. Remove from the heat to cool.

Meanwhile heat a large saucepan filled with boiling, salted water and bring to the boil. Once boiled, add your pasta of choice and cook according to the directions on the packet.

Two-three minutes before the pasta is ready, add the broccoli. Once the pasta and broccoli are cooked, drain and set aside.

While the pasta is cooking, place the cooled spinach mixture plus the butterbeans into a small high-speed blender and blend on high to form a puree.

Mix the spinach puree through the pasta and broccoli and serve. Sprinkle with nutritional yeast if desired.
